Okay so my first cheat day post…definitely my favorite subject to write about. Cheat day best day!! A few months ago almost everyday was cheat day for me. Now, I am eating very strict throughout the week and take Saturday to reward myself for a good week of eating! I usually eat an “unhealthy” snack during the afternoon with a normal lunch, then eat any meal I want for dinner, followed by dessert (of course). My go-to cheat snack has been the exact same thing for the last 3 Saturdays…banoffee muffins..what?
Banoffee is a shortened term for banana toffee. What’s crazy is I really don’t even enjoy bananas that much, and I never even knew I liked toffee. There is something about banana flavor in a warm muffin with chunks of creamy caramel in the middle…TO DIE FOR!! I mean look at the caramel close up pic..mouth watering. So, I figured I would share a recipe for you guys so you can enjoy them just as much as I do here in The Netherlands! There are millions and millions of recipes out there so if there’s something you don’t like about this one, just google “banana toffee muffins” and you will find a million!
My favorite recipe is from The Food Network. In under an hour you can have your own melt in your mouth muffins by following this super simple recipe. It’s really no different than any other muffin mix. The Food Network recipe makes 12 muffins, so if you want to make more than that just double/triple the ingredients. Make sure you have a muffin pan. This can be the cheap throw away pans or a nice one. Either way, make sure to use some muffin liners or some cooking spray to make sure the sides do not stick. Trust me, you’re going to want to eat every inch of this muffin.
Preheat the oven to 375, and begin to make your muffin mix! In a small bowl mix together 1 1/4 cup of flour, 1 tsp of baking powder and 1 tsp of baking soda. In a separate bowl you are going to want to mix together the wet ingredients. By doing this in two separate bowls you are making sure you do not combine the flour mix too much with the wet mix. Yes, this is possible. If you were to combine all in one bowl and whisk, there would not be any room for air and the muffins would not turn out “light” and “fluffy” like we want them to be. Just trust me.
Combine 2 eggs, 1/2 cup of milk, 5 tbsp of oil, 2 bananas (mashed), 1 tsp of vanilla extract and a heaping spoonful of caramel in a large bowl. If you want a sweeter muffin you can substitute vanilla almond milk. If you are wanting a dairy substitute, water will work just as well. For the caramel, a can of “carnation caramel” will work perfectly. Combine the wet mix into the flour mix, but make sure not to mix too hard like I mentioned earlier. You’re going to want it a little lumpy so it bakes with some air bubbles, hence leading to fuller fluffy muffins. No one wants a scrunched sad muffin.
Once your mixture is complete, swirl the rest of the carnation caramel can throughout the mix. So much caramel goodness I am drooling just thinking about it. && you’re done! Now all that’s left to do is fill up the muffin liners, throw in the oven for 20 minutes and voila! These muffins are a GAME CHANGER! I seriously don’t think I will ever want a lame blueberry muffin again. Try it out for yourself and let me know how you like it. I promise you won’t be disappointed 🙂
